How to Choose Good Quality Makhana

Makhana looks similar from pack to pack, but quality varies a lot. These are the things worth checking before you buy, whether you are picking up one pack or ordering a wholesale carton.
1. Look at the grade, not just the price
Grades such as 4+ and 5+ describe kernel size. Larger grades cost more because fewer seeds pop that big, and they hold their shape better when roasted or packed.
2. Check colour and uniformity
Good makhana is clean white to off-white and fairly uniform. Dull grey patches usually mean poor drying or age; wildly mixed sizes mean the lot was not properly sorted.
3. Count the broken pieces
Some breakage is normal. A lot of powder and half-kernels at the bottom of the pack is not — it points to rough handling or a low-grade lot.
4. Test the crunch
Fresh makhana snaps cleanly. If it bends or feels soft, it has picked up moisture, which also means it will not roast well.
5. Ask about packing
Makhana is fragile and absorbs moisture, so sealed packing matters as much as the kernel itself. For bulk buying, ask how cartons are lined and how they should be stored.
