What Is Makhana? Everything You Need to Know About Foxnuts
If you have seen light, white, puffy balls sold as a snack and wondered what they are, you have met makhana. It is also written as fox nuts, foxnuts or lotus seeds, and it has been part of Indian kitchens for generations.
Makhana in one line
Makhana is the puffed seed of the prickly water lily, a plant grown in shallow ponds. The raw seed is hard and small; once it is dried and heated, it pops open into the soft-crunchy white kernel most people recognise.
Because it is simply a seed that has been puffed, plain makhana has a mild, nutty taste and takes on whatever seasoning you add to it.
Why makhana is such a popular snack
- It is light and easy to eat by the handful, so it works well as an evening or travel snack.
- It is neutral in flavour, which makes it suitable for both plain roasting and bold seasonings.
- It has a long shelf life when kept sealed and dry.
- It is widely used in Indian cooking too — in kheer, curries and fasting-day dishes.
How makhana is graded
Not all makhana is the same. Quality is judged mainly by size, colour and how cleanly the seed has popped. Larger, whiter and more uniform kernels are sold at higher grades — for example 4+ and 5+ — while smaller or broken pieces are graded lower.
When you buy makhana, the grade matters more than the brand name on the pack. Bigger grades look better on a shop shelf and stay crunchier when roasted.
Plain or flavoured?
Raw makhana is usually roasted at home with a little ghee and salt. Ready-to-eat flavoured makhana skips that step: the kernels are roasted and seasoned, so the pack is ready to open and eat.
Both have a place. Raw is flexible for cooking; flavoured is convenient for snacking.
